A simple, healthy and dairy-free alternative to traditional hot chocolate. I know you’re gonna love this!
I was always a big consumer of dairy. I drank milk like it was going out of fashion and like many of the changes I have made to my diet and lifestyle, it is amazing to reflect on what I know now and what I thought was ‘healthy’ and good for me previously. When I was initially told I had osteopenia my immediate and encouraged remedy was to up the dairy intake in the form of milk, yoghurt and cheese. All low-fat, non-fat versions of course because that’s healthy and good for you right? Not exactly. After several adverse reactions to dairy, it was then suggested I was ‘lactose intolerant’ which at the time shed no light on how I was supposed to manage both diagnoses and where the hell was I meant to get my calcium from?! I researched, studied and implemented trial and error tactics to find out what the deal with dairy was and how this applied to my health and wellbeing. What I discovered along the way sparked my awareness, changed my thinking and was another big step I took on the path to wellness.
Action Step: Be present in the moment with others, give each person whether they be family, friend, or someone you just met your genuine undivided attention. You will spend less energy ensuring someone is the centre of your universe for the time you are together, than what you will worrying about your words, your actions or where you have to be next. Here and now is where its at and true connection will rock your world!

I have played around for some time simplifying this buckwheat pancake recipe so that it is quick, easy and affordable to make. This makes for a great start to the day or, you could make mini pancakes and have them as a snack on the run with your favourite spread. I am so excited to share with you what has been going on behind the scenes of Ultra Inspired. Last year, I often caught myself apologising for not being ‘Bridey’, I felt uncomfortable admitting that planning our wedding truly did not consume much of our time nor conversations. That it was fun. I couldn’t articulate that despite the well-intended warnings we were having a great time dreaming up ideas for our big day. And I certainly did not know how to explain we weren’t incorporating many, if any, traditional elements into the day. My husband and I were so excited at the potential of our thoughts we came really close to launching a business based on that brilliance. Planning our wedding was genuinely fun, stress-free and jam-packed full of excitement.
I have to confess…and let’s be honest, you have probably already noticed, I have not been posting on Ultra Inspired regularly. At present there is no rhythm to what might pop up to brighten your day and I am the first to admit that this shiny space of inspiration for incredible folk such as yourself might seem a little unloved. It’s not, in fact it is the opposite!
Ultra Inspired and its amazing readers are on my mind constantly, so much so at the moment that my mind is swirling with ideas and opportunity, I am standing at a crossroad and I am not sure which direction to take. I am so freakin’ excited about the possibilities that I am currently obsessing with it has rendered me stuck!
